Coconut Oil Granola

Ingredients
Dry Ingredients
  • 3 cups rolled oats
  • 1 cup pecans, chopped roughly
  • ¾ cup pistachios, chopped roughly
  • ½ cup flour (I use sprouted wheat or whole wheat flour)
  • ⅛ cup chia seeds
  • 1 tsp cinnamon
  • ½ tsp unrefined sea salt
Wet Ingredients
  • ¾ cup melted coconut oil
  • 2 Tbsp honey
  • 2 Tbsp real maple syrup
Instructions
  1. Preheat oven to 250 degrees F.
  2. In a large bowl, mix all the dry ingredients together.
  3. In another bowl, whisk the wet ingredients together until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until combined.
  5. Spread the mixture onto 2 pans in a thin layer.
  6. Bake for 1 hour, stirring every 20 minutes.
  7. Remove the granola and let it sit without stirring, it will form clusters as it cools.
