Healthy Cheese Sauce

Ingredients
  • 2 Tbsp butter
  • 1 Tbsp arrowroot powder
  • 1 cup whole milk
  • 1½ cups shredded cheddar cheese
  • ¼ tsp unrefined sea salt
  • ⅛ tsp pepper
Instructions
  1. Add butter to a saucepan and melt over medium-low heat.
  2. Put the arrowroot powder in a cup and add about 1 Tbsp cold water to it, whisking until smooth.
  3. Add the arrowroot slurry to the butter and mix briefly.
  4. Pour milk into mixture and stir with a wooden spoon until combined.
  5. Cook and stir over medium-low heat until mixture thickens, about 3 minutes.
  6. Stir in the cheese until it’s melted and smooth.
  7. Season with salt and pepper.
  8. Serve hot over vegetables or potatoes.
