Cobb Salad

Ingredients
  • 2 heads lettuce, washed and chopped
  • 1 cup shredded or chopped cooked chicken
  • ½ lb bacon, fried until crisp and chopped
  • 3 hardboiled eggs, peeled and chopped
  • 1 avocado, diced
  • ½ cup grape tomatoes, halved
  • ¼ cup blue cheese crumbles
  • pepper, to taste
  • blue cheese or ranch dressing
Instructions
  1. Combine lettuce, chicken, bacon, hardboiled eggs, avocado, tomatoes, blue cheese crumbles, and pepper in a large bowl.
  2. Toss lightly until combined.
  3. Dish onto salad plates.
  4. Top with blue cheese or ranch dressing.
Notes
I like to use green leaf lettuce and/or Bibb lettuce.
I use leftover chicken from a whole roasted chicken, but grilled chicken works great too.
