Banana, Pecan, Cinnamon Oatmeal

Ingredients
For soaking the oats:
  • 1 cup organic rolled oats (not quick oats)
  • 2 cups water
  • 1 Tbsp of an acidic medium (yogurt, whey, or buttermilk)
For cooking the oats:
  • 1 cup water
  • ¼ tsp unrefined sea salt
For the toppings:
  • ½ cup raw whole milk or cream
  • 1 banana, sliced
  • ½ cup pecans, roughly chopped
  • cinnamon, to taste
  • real maple syrup, to taste
Instructions
  1. Put the rolled oats in a glass bowl and cover with water.
  2. Add in your acidic medium and stir to combine.
  3. Let oats sit on your counter at room temperature overnight or for 8 to 24 hours.
  4. When finished soaking, put oats in a sieve and rinse with water.
  5. Bring 1 cup of fresh water and sea salt to boil in a pot.
  6. Add in rinsed soaked oats and simmer on low.
  7. Cook for 3 to 5 minutes or until oats reach a desired consistency, stirring occasionally.
  8. Scoop into bowls and top with cream, bananas, pecans, cinnamon, and maple syrup.
