Grilled Lemon Salmon

Ingredients
  • 2 fresh skinless salmon fillets
  • extra-virgin olive oil
  • unrefined sea salt, to taste
  • pepper, to taste
  • 1 fresh lemon
Instructions
  1. Preheat the grill on medium.
  2. Rub the salmon fillets with olive oil.
  3. Sprinkle with salt and pepper.
  4. Cut the lemon into ½ inch rings.
  5. Place the lemon rings on the grill.
  6. Place the fish on top of the rings.
  7. Cook for 4 minutes, then turn the filets, placing them on the lemon slices again.
  8. Cook for another 4 minutes or until the fish is just barely opaque throughout.
  9. Serve with grilled asparagus and rice.
