Kimchi Tuna Soup

  • 1 Tbsp butter, lard, tallow, or extra-virgin olive oil
  • 1½ cups kimchi, cut into 1 inch pieces
  • 1 can tuna
  • 2½ cups water
  • ½ cup kimchi broth (the juice in the kimchi jar)
  • 1 tsp unrefined sea salt
  • 1 green onion, chopped (optional)
  1. Heat a pot over medium heat and add the butter.
  2. Add the kimchi and tuna and saute for about 5 minutes, stirring occasionally.
  3. Add water and kimchi broth and bring to a boil.
  4. Boil for 10-15 minutes.
  5. Season with salt, adding it gradually as you taste it.
  6. Add chopped green onion.
  7. Serve hot with a bowl of rice on the side.
