Homemade Sprouted Wheat Tortillas

Ingredients
  • 2½ cups sprouted wheat flour
  • 1 tsp unrefined sea salt
  • ½ cup cold lard or butter
  • ¾ cups hot water
Instructions
  1. Combine flour and salt in a bowl.
  2. Grate or cut the lard or butter into the flour and stir to combine. I like using a pastry cutter to mix it all together.
  3. Add water to a pot and bring to a boil.
  4. Add the water all at once to the flour and stir until it makes a ball.
  5. Flour a clean surface and knead the dough until it feels smooth and not sticky, adding flour if needed.
  6. Make golf ball sized dough balls and spread them on a cookie sheet (makes about 12).
  7. Cover with a damp towel and let sit for 1 hour.
  8. Lightly flour a clean surface and roll out the dough balls one at a time into circles.
  9. Heat a griddle or frying pan on medium heat.
  10. Put the tortilla on the griddle.
  11. Cook on one side until bubbles form, about 30 seconds, and then flip it.
  12. Cook on the other side until you have some browning and then transfer to a towel.
