Garden Salad
Author: Two Thirds Cup
  • 1 head romaine lettuce
  • 2 tomatoes
  • 2 cucumbers
  • 1 carrot
  • ½ red onion
  1. Wash the lettuce, break it into pieces, and dry in a salad spinner.
  2. Wash the tomatoes and slice into wedges when using large tomatoes or slice into halves when using cherry tomatoes.
  3. Wash the cucumbers, slice them once lengthwise, then slice them into half circles. Leave the peel on for more nutrients or peel them if the skin is too tough.
  4. Wash the carrots, cut the ends off on both sides, and grate them or cut into small slices. Leave the peel on for more nutrients.
  5. Cut the ends off the red onion on both ends. Peel the skin off the onion. Slice the onion into thin rings and then cut in half again to form half circles.
To add some variety, top your salad with colored bell peppers, fresh mushrooms, peas, broccoli, radishes, kidney beans, sunflower seeds, croutons, or sprouts.
