- 1 Tbsp butter
- 3 Tbsp arrowroot powder or flour
- 2½ cups drippings from a pastured roast chicken
- 1 Tbsp cream or whole milk
- ½ tsp unrefined sea salt
- ¼ tsp pepper
- In a large saucepan, melt the butter.
- Mix the arrowroot powder with about 1 Tbsp cold water until dissolved and smooth.
- Pour arrowroot mixture into the saucepan and stir into the butter.
- Whisk in the drippings and cook uncovered, whisking continually, until it thickens, about 5 minutes.
- Whisk in the cream or milk and add the salt.
- Cook until heated through and the gravy has reached your desired thickness.
