Chicken Gravy

  • 1 Tbsp butter
  • 3 Tbsp arrowroot powder or flour
  • 2½ cups drippings from a pastured roast chicken
  • 1 Tbsp cream or whole milk
  • ½ tsp unrefined sea salt
  • ¼ tsp pepper
  1. In a large saucepan, melt the butter.
  2. Mix the arrowroot powder with about 1 Tbsp cold water until dissolved and smooth.
  3. Pour arrowroot mixture into the saucepan and stir into the butter.
  4. Whisk in the drippings and cook uncovered, whisking continually, until it thickens, about 5 minutes.
  5. Whisk in the cream or milk and add the salt.
  6. Cook until heated through and the gravy has reached your desired thickness.
