Honey Vanilla Popcorn

  • ½ cup popcorn kernels (roughly 4 quarts popped)
  • ½ cup butter
  • ¼ cup honey
  • 1 tsp vanilla extract
  • ½ tsp unrefined sea salt
  1. Preheat oven to 250 degrees F.
  2. Pop the popcorn kernels in an air popper.
  3. Separate the popcorn into two large bowls for easy stirring.
  4. In a medium saucepan, combine the butter and honey and stir over medium heat until melted.
  5. Stir in the vanilla extract and salt until combined.
  6. Remove saucepan from heat.
  7. Pour half of the mixture over the popcorn in one bowl and half into the other.
  8. Stir to coat all pieces.
  9. Spread the popcorn onto two cookie sheets with a lip.
  10. Bake in the oven for 1 hour, stirring every 15 minutes.
  11. Remove from the oven and let it cool slightly before eating.
If you cook this popcorn in the oven, the honey and butter caramelize and it tastes a lot like Cracker Jacks. If you like softer popcorn, skip the cooking part and just let it cool on a pan after you've stirred in the butter and honey mixture.
