Asparagus is such a fast and easy side to make. And it goes well with most meat and grain combos. But sometimes it’s hard to get it just right–not too crunchy and not too chewy. Check it often as you saute and err on the side of undercooked. You want the asparagus tender, but not mushy.
Use pastured butter or bacon grease to add flavor to your asparagus. I like Organic Valley and Kalona SuperNatural butter and I use bacon grease from Beeler’s bacon that I buy at Real Foods. I think high quality butter and bacon grease are both healthy options and are great when cooking at higher temperatures. - 1 bunch asparagus
- 1 Tbsp pastured butter or bacon grease
- Dash unrefined sea salt
- Dash pepper
- Wash the asparagus.
- Hold each spear between your two hands and bend until it breaks in its natural spot--between tough bottom and tender top.
- Melt the butter in a saute pan over medium heat.
- Add the asparagus and season with salt and pepper.
- Cook uncovered, stirring occasionally, for about five minutes or until just tender.
