Granola with pistachios? Yes please! This granola recipe has some really good qualities: 1) no refined sugar, 2) no refined flour, 3) lot’s of healthy ingredients. And it’s yummy. And it’s easy. I really love granola. I like it in a bowl with raw milk. I like it in a bowl with yogurt and fruit. And I like it when camping and hiking.
This recipe is a variation on Our Favorite Coconut Oil Granola at Pinch of Yum. An awesome food blog that I love. I made a few small changes to mine, like leaving the raisins out. I love snacking on just plain raisins, but I usually don’t like them in things. Check out their blog for the raisin version.
We went to St. George over the weekend. It was 80 degrees. We hiked in red rock, swam in the pool, played at the beautiful downtown natural-looking splash pad, and ate popsicles. Now we’re home and I’m watching the snow fall outside my window. We also came down with colds. My 8 month old baby is coughing and whimpering with a sore throat. Tear my heart out!
I’m not in the mood to bundle everyone up and venture outside. So I’m baking. I’m preparing granola for another trip, down south, where it’s warm, and we can camp and wear shorts.
I know many of you use raw ingredients and soak and dehydrate them before making your granola. You can do that with this recipe if you’d like. Read about soaking your grains here. I didn’t soak anything in this recipe. Lately, I’ve been soaking my grains if I’m going to cook them, like when I make steel cut oatmeal or quinoa, but not if I have to dehydrate them after soaking. I don’t have a dehydrator and I’m fine with soaking my grains only when it’s convenient right now. Although I think soaking nuts, seeds, and grains is beneficial, I don’t have the energy to soak and sprout everything at the moment. I’d love to hear your thoughts on the subject!
Making this granola isn’t cheap and buying the nuts in bulk is helpful. I used pre-shelled pistachios and pecans that I buy at Costco. This recipe calls for flour because it helps the granola to cluster. If you don’t care about it clustering, you can leave the flour out. I used sprouted wheat flour and it did help the granola cluster. If you use regular whole wheat flour it helps the granola cluster even more. I hope you enjoy this recipe. I love it!
- 3 cups rolled oats
- 1 cup pecans, chopped roughly
- ¾ cup pistachios, chopped roughly
- ½ cup flour (I use sprouted wheat or whole wheat flour)
- ⅛ cup chia seeds
- 1 tsp cinnamon
- ½ tsp unrefined sea salt
- ¾ cup melted coconut oil
- 2 Tbsp honey
- 2 Tbsp real maple syrup
- Preheat oven to 250 degrees F.
- In a large bowl, mix all the dry ingredients together.
- In another bowl, whisk the wet ingredients together until smooth.
- Pour the wet ingredients into the dry ingredients and stir until combined.
- Spread the mixture onto 2 pans in a thin layer.
- Bake for 1 hour, stirring every 20 minutes.
- Remove the granola and let it sit without stirring, it will form clusters as it cools.

I believe that avoiding packaged foods is a first step to be able to lose weight. They will often taste good, but processed foods include very little vitamins and minerals, making you try to eat more just to have enough electricity to get through the day. Should you be constantly consuming these foods, converting to grain and other complex carbohydrates will let you have more vigor while ingesting less. Interesting blog post.
